Pesto Pasta Salad with Quorn Pieces

Fresh and simple vegan pesto pasta salad recipe oozing with lots of green goodness! Made using Quorn Pieces, this meat free dish can be prepared super quickly so it’s perfect for a fuss free weeknight dinner.

Ingredients

  • 350g Quorn Pieces
  • 400g cooked pasta
  • 65g kale
  • 65g baby spinach
  • 3 spring onions
  • Fresh thyme

Pea pesto:

  • 200g green peas
  • pine nuts
  • fresh basil
  • ½ tbsp olive oil
  • juice of 1 lemon
  • Salt and Pepper to taste

Method

  1. To make the pea pesto, prepare the peas according to the instructions on pack. Blend the cooked peas with the pine nuts, basil and olive oil in a food processor and until smooth. Add the lemon juice, salt and pepper to taste.
  2. Next, fry the Quorn Pieces until golden brown. Add the kale and fry for a few more minutes then combine in a bowl with the cooked pasta, spinach and pea pesto mix.
  3. Finally, chop the spring onions fresh thyme. Sprinkle over the pasta salad, serve and enjoy.
