Ingredients

For the filling:

  • Quorn Pieces
  • 5-6 eggs
  • 3-4 tbsp mayonnaise
  • 2 tbsp chopped parsley or dill
  • 2 green onions, finely chopped
  • Salt and pepper, to taste

For the bread rolls:

  • 6-8 slices of white or brioche bread
  • Canola or sunflower oil, for deep frying
  • Toothpicks

Method

  1. Prepare the filling by frying or sautéing the Quorn Pieces as per pack instructions. Set aside to cool.
  2. Hard boil the eggs, peel them, and mash them with a potato masher or fork. Then mix the mashed eggs with mayonnaise, chopped herbs, green onions, and the cooled Quorn Pieces. Season with salt and pepper.
  3. Prepare the bread by using a rolling pin or wooden board to flatten each slice.
  4. Shape and Fry the bread rolls by folding the bread pieces into small pockets, securing each with a toothpick.
  5. Heat the oil in a deep fryer or a deep pan and deep fry the bread pockets until they are golden and crispy. Drain the bread rolls on paper towels to remove the excess oil.
  6. Once fried, carefully remove the toothpicks from the bread pockets. Use a piping bag or a spoon to fill each bread roll with the Quorn Pieces and egg mixture.
  7. Serve warm as an appetizer or snack and enjoy!
