Quorn Vegetarian Meatball Sub

These Quorn Vegetarian Meatball Subs are topped with cheesy fresh mozzarella, ripe tomatoes, garlic, pesto, and Quorn Swedish Style meatballs served in a crusty bread loaf.

Ingredients

  • Pack of Quorn Swedish Style Meatballs
  • 2 long loafs of thick crusty bread
  • 8 slices of fresh mozzarella
  • 4 ripe tomatoes
  • 1 garlic clove, whole
  • Pinch of salt
  • ½ cup of pesto
  • 1 onion
  • 1 jar of tomato sauce of your choice

Method

  1. Set the oven to 180°C (356°F).
  2. In a pan, simmer the sliced onion until golden. Add the Quorn Swedish Style Meatballs and tomato sauce (add spices if desired). Cook for 10-15 minutes.
  3. Coat the garlic clove with oil and bake in the oven for 15 minutes.
  4. Slice the bread loaf in half. Spread the mashed baked garlic clove on the bread, then layer with tomato slices, meatballs with sauce, 3-4 slices of mozzarella, and top with pesto.
  5. Place the assembled subs in the oven and bake for 20 minutes.
  6. To serve, cut into desired sizes and serve hot as a delicious lunch, brunch, or appetizer.
