Ingredients

Roasted Veggies:

  • 1 large sweet potato, peeled and chopped (300g)
  • 2 carrots, peeled and chopped (180g)
  • 1 red Capsicum, chopped (150g)
  • 2 tbsp olive oil
  • 1 tbsp finely chopped fresh thyme
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 small beetroots, peeled and chopped (250g)

Buddha Bowl:

  • 1 pack (300g) Quorn Mince
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground cilantro
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 80g shredded kale, stems removed
  • 400g cooked bulgur wheat
  • 30g toasted pumpkin seeds
  • 30g dried cranberries
  • 30g Goats Cheese

Lemon Chive Vinaigrette:

  • 30 ml olive oil
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 2 tbsp finely chopped fresh chives
  • 1/2 tsp salt
